Ingredients
- 4 boneless skinless chicken breasts (thin sliced)
- 2 large eggs
- Splash of half-and-half
- Sea salt and fresh ground pepper
- 1 teaspoon of garlic powder
- 1 1/2 cups panko breadcrumbs
- ¼ cup of olive oil
- ¼ cup of fresh chopped dill
- ¼ cup of fresh chopped chives
- 1 lemon for finishing
Instructions
Set Up a Breading Station:
- In three separate shallow dishes, set up a breading station. In the first dish, beat the eggs. In the second dish, combine the breadcrumbs, fresh chopped dill, fresh chopped chives, salt, pepper, and garlic powder. Mix these ingredients well.
Bread the Chicken:
- Dip the chicken into the beaten eggs, allowing any excess to drip off.
- Coat the chicken with the herb breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere. Ensure that the chicken is evenly coated with the breadcrumb mixture.
Bake the Chicken:
- Preheat the oven to 425°F. Once the chicken is breaded, carefully place the breaded chicken on a sheet pan with parchment paper. Cook for about 25-35 minutes, or until the chicken is golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
Garnish:
- Squeeze fresh lemon juice over the top of the crispy chicken.
Serve Warm:
- Serve the breaded herb chicken cutlets hot, alongside your favorite side dishes like mashed potatoes, a garden salad, or steamed vegetables.
