Ingredients
For the Shredded BBQ Chicken:
- 2 cups of shredded rotisserie chicken
- 1 cup BBQ sauce use your favorite brand or homemade
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Flatbreads:
- 4 flatbreads store-bought or homemade
- 1 cup shredded mozzarella cheese
- Red onion thinly sliced (optional)
- Fresh cilantro chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place shredded rotisserie chicken in a skillet. Season the chicken with salt, pepper, smoked paprika, and garlic powder. Pour the BBQ sauce over the chicken, making sure it’s well-coated. Cook until warm.
- Place the flatbreads on a baking sheet. Spread a generous layer of the shredded BBQ chicken over each flatbread.
- Sprinkle shredded mozzarella cheese over the shredded BBQ chicken. If desired, add thinly sliced red onions and sliced jalapenos for an extra kick.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly, and the edges of the flatbreads are golden brown.
